PANCAKE RECIPE

Nothing says "weekend" more than homemade pancakes. Make this in 30 minutes or less.

INGREDIENTS

  • 1 cup flour

  • 1.5 tbsp sugar

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 1 cup milk

  • 1 egg

  • 2 tsp melted butter

  • 1 tsp vanilla extract

  • Cooking spray

  • Pancake syrup (optional)

  • Strawberries, blueberries, raspberries (optional)

DIRECTIONS

  1. In a medium bowl combine the flour, sugar, baking powder and salt. Set aside.

  2. In a large bowl mix together the milk, egg, butter and vanilla extract.

  3. Add half the dry mixture to the large bowl and mix until smooth, add in the rest of the dry mixture and keep mixing until there are no lumps.

  4. Heat a cast iron griddle on medium heat, add cooking spray.

  5. Lower heat and slowly pour the pancake batter.

  6. When bubbles start forming flip the pancake.

  7. Continue cooking for 1 more minute and remove.

  8. Top with strawberries, blueberries, raspberries or pancake syrup (optional)
